Twice-Baked Potatoes

6 large potatoes
1/3 cup milk or light cream, heated
Salt & Pepper
2 egg whites
1/2 cup shredded cheddar cheese

Bake potatoes in microwave 12 -16 minutes.
Cut potatoes in half crosswise and carefully scoop out center, leaving a 1/4 inch thick shell.
Place center in mixing bowl and add butter, milk, salt and pepper.
Beat with electric mixer until smooth; set aside.
In a small bowl, beat egg whites until stiff peaks form.
Fold egg whites into potato mixture.
Preheat oven to 400 degrees.
Fill potato shells with mixture.
Sprinkle with cheese and paprika.
Bake for 10 minutes or until cheese is melted.
