Potato Kolache

Kolache is a type of pastry consisting of a semi-sweet yeast dough baked with fillings such as fruits, poppyseed, prunes, and cream cheese, often served open-faced, and topped with a topping such as popsika (a crumbled mixture of sugar, flour and butter). Originating as a semi-sweet wedding dessert from Central Europe, they have become popular in parts of the United States.

Ingredients
1 medium potato, washed and peeled
1 cup butter or margarine
5 to 6 cups all-purpose flour, divided
1 teaspoon salt
cup sugar
2 packages (1/4 ounce each) active dry yeast
1 can evaporated milk, diluted
2 eggs, slightly beaten

Directions
Boil potato in water until tender; drain; reserve potato water.
Add enough water to potato water to equal 1 cups.
Mash potato until smooth; set aside.
Combine 4 cups flour, salt, sugar, and yeast in large bowl.
Combine potatoes, potato water, milk, and butter in saucepan.
Heat to 120 degrees F to 130 degrees F.
Remove from heat.
Stir into flour mixture.
Add eggs; blend thoroughly.
Stir in enough remaining flour to make a soft dough.
Cover, Let rise in warm place, free from draft, until almost double in bulk, about 1 hour.
Grease a baking sheet; set aside.
Punch dough down, Pinch off walnut-size pieces of dough; roll each into a ball. Place about 1 inch apart on prepared baking sheet.
Make a depression in the center of each ball, pushing dough toward edge, leaving a -inch rim around edge.
Fill centers with approximately 2 teaspoons filling. (Use your favorite jam, canned fillings, or make one from scratch).
Let rise in warm place, free from draft, until almost double in bulk, about 20 minutes. Preheat oven to 375 degrees F. Bake 15 to 20 minutes, or until light golden brown. Cool on wire rack.

Apricot Filling
pound dried pitted apricots, chopped
cup sugar

Combine ingredients in saucepan with 1 cups water. Bring to a boil. Simmer, stirring occasionally, 15 minutes, or until thickened.

Cheese Filling
2 egg yolks
1 tablespoon honey
1 tablespoon butter
1 cup ricotta cheese

Combine all ingredients in saucepan. Cook on low heat, stirring occasionally, 10 minutes, or until thickened.
