Wisconsin Spice Cake

1 cups sugar
cup vegetable shortening
1 cup mashed potatoes
3 eggs, slightly beaten
2 cups all-purpose flour
teaspoon cinnamon
teaspoon salt
teaspoon nutmeg
1 teaspoon baking powder
1 cup milk
cup raisins
Carmel Frosting

Preheat oven to 350 degrees.
Grease and flour a 9 X 13-inch pan; set aside.
Cream sugar and shortening in large bowl until fluffy.
Add potatoes and eggs; blend well.
Combine flour, cinnamon, salt, nutmeg, and baking powder in small bowl; mix lightly.
Alternately beat dry ingredients and milk into creamed mixture until well blended.
Stir in raisins.
Pour into prepared pan.
Bake 45 to 55 minutes, or until toothpick inserted in center comes out clean. Cool completely before frosting with Carmel Frosting.

Caramel Frosting
cup butter or margarine
1 cup firmly packed light brown sugar
3 tablespoons milk
2 cups confectioners sugar

Melt butter and brown sugar in small saucepan on low heat.
Cook about 2 minutes, stirring constantly.
Add milk; bring to a full boil on medium-high heat, stirring constantly.
Remove from heat.
Cool slightly.
Beat in sugar with electric mixer until consistency is easily spreadable.
