Cheesy Mexican Boiled Potatoes

4 large or 6 medium potatoes, cut into quarters (no need to peel)
Salt & Pepper
Shredded Mexican-style cheese
Sour Cream

Cut potatoes into quarters and place in a microwave safe bowl with at least one inch of water above the potatoes.
Heat on high for 9 to 12 minutes or until potatoes are tender.
Drain water.
Sprinkle with salt & pepper and top with shredded cheese, salsa and sour cream.
