Mashed Potato Pancakes

2 cups leftover mashed potatoes.
1 Egg (if desired)
Chopped Green Onions or Chives
Dried Herb of choice
Salt & Pepper

Use 2 cups leftover mashed potatoes.
Beat in 1 egg, if desired.
Add chopped green onions or chives; season with dried herb of your choice, salt and pepper.
If potatoes are very moist, stir in a little flour.
Shape into four 3/4 inch thick patties.
Spray a 12-inch nonstick skillet with vegetable cooking spray; saut cakes over medium heat about 6 minutes until browned and cooked through, turning once.
