Repeat-Performance Potatoes

2 Medium Leftover Baked Potatoes
Non-fat Sour Cream
Green Onions
Shredded low-fat sharp cheddar cheese
Salt & Pepper

Halve 2 medium leftover baked potatoes lengthwise; scoop out potato pulp into bowl, leaving 1/4-inch thick shells.
Mash pulp and mix with non-fat sour cream, sliced green onions and shredded low-fat sharp cheddar cheese; season with salt and pepper.
Stuff potato mixture into potato shells, dividing equally; dust lightly with paprika. Heat on HIGH in microwave about 3 to 4 minutes, or until hot.
