Speckled Potatoes

4 medium potatoes (1 1/3 pounds)
1 small onion
1 garlic clove, minced,
1 chicken bouillon cube (use vegetable bouillon for a vegetarian dish)
1/2 cup Chopped parsley

In large saucepan combine 4 medium potatoes (1 1/3 pounds) thinly sliced,
1 each small onion and garlic clove, minced, and 1 chicken bouillon cube.
Add 1 inch water. Cover and cook over medium heat 10 minutes.
Add 1/2 cup chopped parsley; cook 5 more minutes or until potatoes are tender.
Drain and serve.
