Cheddar & Bacon
3 pounds of small unpeeled potatoes
½ pound bacon
1 - 8oz package of peas
White sauce with smoked cheddar cheese:
4 cups milk
1 teaspoon salt
1 stick butter
½ teaspoon pepper
8 tablespoons flour
¾ pound of smoked cheddar cheese
Cook potatoes in water until tender, drain
Cook peas in water until tender, drain
Cut up and fry bacon, drain off grease, let cool and crumble
Melt butter in heavy saucepan.
Add flour and stir with a whisk over medium heat.
Add milk and continue stirring until mixture thickens.
Add salt and pepper.
Cut cheese into small pieces and add to sauce. Stir until cheese melts.
Put potatoes, peas and sauce in covered casserole dish.
Add crumbled bacon on top.
Can be reheated in oven or microwave.
May also be reheated and served from a crock-pot.
