4 cups mashed potatoes, at room temperature
1 package (8 ounces) cream cheese, softened
1/2 cup finely chopped onion
Preheat oven to 350 degrees F.
Lightly grease a 2-quart casserole; set aside.
Combine potatoes, cream cheese, and egg in large bowl; beat with
electric mixer until smooth.
Stir in onion. Spoon into prepared casserole.
Bake 1 hour, or until heated through. Serve hot.
Try adding vegetables to this casserole!
